How to do it
Zucchini is one of my favourites, both in the kitchen and the garden. Because Zucchini is very easy to cultivate as such it has a reputation for overwhelming production, and produces an incredible amount of harvest. Last but not least there are so many varieties to cook, both cold and hot dishes. So let’s go, I show you how to cook yummy zucchini in 5 minutes.
Recipe for 2 persons
- 2 large zucchini
- 1 onion
- 3 table spoon tomato paste
- 3 dl vegetarian broth
- 1/2 garlic
- 80 g feta cheese
- 10-12 calmata olives
- 1/2 dl olive oil
- a pinch of chili flakes
- a bunch of fresh oregano and thyme
- salt and freshly ground black pepper
Divide the zucchini along in two parts and cut into 2 cm thick slices.
Fry zucchinin in olive oil until they turn golden brown but still crispy.
Put the zucchini on a plate. Chop the onion and garlic roughly and brown in the same pan until they are golden brown.
Add the tomato puree and allow to brown for a while with the onion. Pour in the broth and simmer for 2-3 minutes and last the fresh herbs.
Por the sauce in deep plates (a lot of sauce) it should be like a soup or casserole so you can dip bead in the sauce. On the top the zucchini and garnish with the feta cheese, olives.
