Jag skulle dock rekommendera att laga laxen samma dag eftersom den blir saftigare och har en b\u00e4ttre f\u00e4rsk smak. F\u00f6r att f\u00e5 lite syra i soppan anv\u00e4nder jag f\u00e4rska tomater ist\u00e4llet f\u00f6r vin (jag f\u00f6redrar att dricka vinet). Och det faktum att jag har potatis i soppan betyder att soppan ocks\u00e5 m\u00e4ttar bra. Sist men inte minst eller <em><strong>\"the icing on the cake\"<\/strong><\/em>, Jag \u00e4lskar att servera denna soppa med hemgjord basilika aioli. Sk\u00e4r potatisen och tomaterna i bitar. V\u00e4rm en kastrull med olivolja i botten. H\u00e4ll i alla gr\u00f6nsaker och l\u00e5t dem simma lite utan att ta f\u00e4rg. Sk\u00e4r laxen i stora bitar. Salta och peppra runt bitarna. L\u00e4gg sedan f\u00f6rsiktigt laxen i soppan och l\u00e5t den sjuda l\u00e5ngsamt p\u00e5 efterv\u00e4rmen (l\u00e4gg p\u00e5 ett lock). Jag gillar personligen om det finns en liten r\u00e5 k\u00e4rna kvar i laxen. S\u00e5 det inte koka f\u00f6r l\u00e4nge. Tills\u00e4tt \u00e4ggulorna i en sk\u00e5l med salt, senap och lite citronsaft. R\u00f6r om tills allt blandas. Droppa resten av oljan l\u00e5ngsamt under vispning (det \u00e4r viktigt att oljan och \u00e4ggen har samma temperatur, annars kan den sk\u00e4ra sig). R\u00f6r i basilikamixen n\u00e4r all olja \u00e4r i.
