" a good soup starts with a good broth "

I usually store off-cuts of vegetables in a bowl in the fridge which I use to cook my own vegetable broth. It’s both cheap and wise, why throw it away. 

To cook your own vegetable broth

 

Save your vegetable off-cuts in the fridge. When the bowl gets full, then it’s time to boil your broth. Examples of what is suitable to save are root vegetables and not “wet” vegetables such as tomatoes, peppers, cucumbers etc.: 
Good vegetables to save:
Celeriac
carrots
Fennel
Leek
Onions – garlic
stems of parsley

Here’s how to cook your vegetable broth:

 Rinse the vegetables carefully and 
cut them into smaller pieces.
Put in a saucepan and fill with water until it’s covered and boil.
Skim if necessary, season with bay leaves, peppercorns and a hefty pinch of fresh thyme.
 
Allow to simmer for 10 minutes and then strain off the vegetables. 
Then boil down to at least 1/3 or to taste and season with a pinch of salt.
